A quick guide to teriyaki

This cooking method emerged during the Edo period (1603–1868), when Japan was largely cut off from the rest of the world for almost 250 years and developed a unique, flourishing culture. Thanks to improved cultivation methods, key teriyaki ingredients such as soy sauce and mirin (sweet rice wine) became more readily available. At first, this method was mainly used for fish, to preserve it while adding flavour. During the Meiji era (1868–1912), Western influences grew, and the teriyaki method began to be used for beef and chicken as well.

The term teriyaki comes from the Japanese words teri (gloss) and yaki (grilling or frying), and originally referred to the technique of brushing the food repeatedly with the sauce while grilling or frying until a glossy glaze formed.

Today, teriyaki sauces are known worldwide and are used not only for BBQs but also in stir-fries. Teriyaki has become an essential ingredient in fusion cuisine. Through cultural exchange, this centuries-old Japanese technique has become a global taste sensation!
