

Stir-fried soba with prawns & veg
Savoury soba noodles stir-fried with crunchy veg and prawns in a nutty sweet soy, sesame and tahini dressing—full of flavour, gentle heat and texture. Fresh, filling and quick to prepare.

1 tbsp Kikkoman Toasted Sesame Oil – 2 tbsp tahini (sesame paste) – 1 tbsp Kikkoman Sauce for Rice - sweet – ¼ tsp chilli flakes – Salt and pepper
For the dressing, whisk together the Kikkoman Sesame Oil, tahini, Kikkoman Sauce for Rice - sweet, chilli flakes and a pinch of salt and pepper in a small bowl. Adjust seasoning to taste.

150 g soba noodles (alternative: mie or canton) – 1 garlic clove – 150 g broccolini (wild broccoli) – 1 red pepper – 1 medium-sized carrot – 2 tbsp Kikkoman Toasted Sesame Oil – 200 g prawns, peeled and deveined – 2 spring onions – 2 tbsp sesame seeds
Cook the soba noodles in boiling water according to the packet instructions. Drain and rinse under cold water. Set aside. Peel and finely chop the garlic. Wash the broccolini, pepper and carrots, then cut into bite-sized pieces. In a large frying pan or wok, heat the Kikkoman Sesame Oil. Add the broccolini, red pepper and carrot. Sauté for around 5 minutes, stirring occasionally. Add the prawns and sauté for another three minutes, stirring occasionally. Add the noodles and dressing to the wok. Mix everything together, stirring continuously while frying. Wash and thinly slice the spring onions. Toast the sesame seeds in a dry pan until lightly golden, shaking the pan often. Sprinkle the spring onions and sesame seeds over the stir-fried noodles. Arrange on 2 plates and serve hot.
Tip:
If you like things spicier, add more chilli flakes.
