

Cucumber salad with nuts, chilli & soy sauce
A refreshing cucumber salad with crunchy nuts, spicy chilli, and savoury Kikkoman Soy Sauce, topped with roasted onions for added texture and flavour.
Preparation
Step 1

2 long cucumbers, approx. 600 g
Cut the cucumbers into thick crescents.
Step 2

1 tbsp chilli flakes – 1 tbsp rice vinegar – 3 tbsp Kikkoman Naturally Brewed Soy Sauce – 2 garlic cloves – 2 cm ginger – 1 tbsp honey – 1 tsp Kikkoman Toasted Sesame Oil – 50 g cashew nuts – 1 pinch of salt – 1 pinch of pepper
Chop the garlic, ginger and cashew nuts finely. Combine the garlic, nuts and ginger in a bowl. Add the chilli flakes, Kikkoman Soy Sauce, vinegar, honey and Kikkoman Sesame Oil and mix everything. Season with the salt and pepper to taste.
Mix the cucumbers with the dressing.
Step 3

50 g fresh coriander – 50 g chives – 50 g roasted onions
Chop the coriander and chives. Mix with the cucumbers and serve sprinkled with the roasted onions.
