Pumpkin spice latte with nuts

A warming, creamy drink infused with the aroma of autumn spices. The sweetness of pumpkin and maple syrup works with the warm spice notes, while bold espresso balances the flavours—somewhere between a coffee and a light dessert.

Hokkaido pumpkin purée

 ½ tsp
ground cardamom
 ½ tsp
ground ginger

of ground nutmeg

pea protein drink

Preparation

Step 1

4 tbsp Hokkaido pumpkin purée – 1 tbsp maple syrup – 1 tsp Kikkoman Naturally Brewed Tamari Gluten free Soy Sauce1 tsp ground cinnamon –  ½ tsp ground cloves –  ½ tsp ground cardamom –  ½ tsp ground ginger – 1 pinch of ground nutmeg

Mix the pumpkin purée with the maple syrup, Kikkoman Gluten-free Soy Sauce and spices. Divide the mixture between two mugs.

Step 2

4  shots espresso – 400 ml pea protein drink

Pour the hot espresso and frothed pea protein drink over the spiced pumpkin mixture.

Step 3

2 tbsp pumpkin seeds – 2 tbsp pecans – 1 tsp Kikkoman Naturally Brewed Tamari Gluten free Soy Sauce1 tbsp maple syrup

Toast the pumpkin seeds and pecans in a dry pan. Reduce the heat, then add the maple syrup and Kikkoman Gluten-free Soy Sauce. Once coated in the syrup, serve as a topping for the latte.

Tip:

Instead of the individual spices, you can use 1 tbsp ready-made pumpkin spice blend. To make your own pumpkin purée, cut the pumpkin into smaller pieces, then bake or boil until soft and blend until smooth.

You can replace the pea protein drink with an oat or almond drink.

If the latte doesn't need to be vegan, add a spoonful of whipped cream on top.
