Lemon-courgette noodle squares
Enjoy a burst of freshness with these lemon-courgette noodles—light, zesty, and perfect for a quick, healthy lunch.
Preparation
Step 1
150 g Łazanki (square Polish noodles) – 1 medium courgette
Cook the noodles until al dente. Cut the courgette into cubes.
Step 2
1 tbsp olive oil – 2 tbsp lemon juice – ½ lemon (for zest) – 1 tsp pepper – 2 tbsp Kikkoman Naturally Brewed Soy Sauce
Fry in olive oil and season with the lemon juice and zest, pepper and Kikkoman Soy Sauce.
Step 3
2 tbsp dried yeast flakes – Basil to garnish
Mix the courgette with the cooked noodles, sprinkle with the dried yeast flakes and garnish with basil.
Tip:
You can substitute the yeast flakes with any hard cheese, preferably Parmesan or Pecorino.
