This zingy summery soup recipe gets its vibrant hue from fresh yellow peppers and tomatoes. So quick and easy to make. Serve cold as a starter or main, sprinkled with chilli for some extra bite. Suitable for vegans.

cold water
1 bunch
of basil
1 bunch
of coriander
A few mint leaves
2 pinch
of pepper

chilli pepper
A few leaves of fresh mint for decoration

of sunflower seeds
