
Salad of couscous with feta cheese and cucumber
Ingredients for 2 portions
- ½ glass of couscous
- 1 glass of water
- 1 cucumber
- 4 tbsp chopped onion
- 1 stem celery (green part)
- Handful of fresh mint
- Handful of fresh coriander
- ½ pc pomegranate
- 125g feta
- 10 cherry tomatoes
- 2 tbsp olive oil
- 3 tbsp Kikkoman Ponzu Lemon
Preparation
Pour hot water onto couscous and cover for 5 minutes. Mix with fork and leave aside.
Chop cucumber into cubes, chop onion and celery very finely. Chop cherry tomatoes, mint and coriander and take out the seeds of pomegranate. Cut feta into small cubes.
Mix all ingredients in a bowl, sprinkle with olive oil and Ponzu. Serve fresh.
