Preparation

Make some cuts on the fatty part of the duck breasts. Heat the oil in a frying pan to a high temperature and add the duck skin side down. Cook for 10 minutes. Remove the duck and the frying juices from the pan. Put 3 tsp. of Orange Ponzu Sauce into the pan, bring back to the boil and return the duck breasts on the other side. Cook for 3 minutes. Remove from the heat and leave to cool for 3 minutes.

Peel the apples and cut them in 8 pieces. Pour 2 tsp. of Ponzu Orange Sauce into a large pan and simmer for 2 minutes at high heat. Add the apples and brown them for 2 to 3 minutes on each side. Add the pine nuts, stir and remove from the heat.

Remove the duck from the pan, cut into slices and arrange them on plates. Heat up the cooking juices that you placed aside and pour over the duck. Serve the apples next to the duck covered in their cooking juices and add the pine nuts. Season with pepper and serve.
