Preparation time: 55 mins

  1. Cut the carrot, broccoli and bell pepper into small cubes.
  2. Blanch for one minute in boiling water. Mix into the mashed potatoes alongside the flour, egg yolks, soy sauce and pepper. Let it rest for an hour in the refrigerator.
  3. Make small finger sized portions. Coat in flour, then eggs beaten with soy sauce and finally in breadcrumbs.  Fry 4 minutes in hot oil until golden.
  4. Mix the ingredients for the dressing. Serve with lime wedges on the side.
