Ingredients for 4 portion(s)
- 6 different colored pointed peppers (approx. 430 g)
- 3 large cloves of garlic
- 2 slices of ginger
- 3 tablespoons of olive oil
- 1 tablespoon of butter
- 1 liter of broth
- 8 tablespoons of tomato passata
- 280 g coconut milk (solid part)
- 50 g leek (white part)
- Approx. 2-3 cm of chili peppers
- 4 tablespoons Kikkoman Naturally Brewed Soy Sauce
- 320 g of prawns
- 2 small onions
- ½ teaspoon of turmeric
- Juice of 1 lemon
- 3-4 tablespoons of wheat flour
Additionally:
- chives for decoration
Preparation
- Peel the prawns, add 2 tablespoons of soy sauce to them, mix and leave them in the refrigerator for approx. 20 minutes.
- In the meantime, finely chop the onion, garlic and ginger, cut the leek into slices and fry them together in a pot with 2 tablespoons of olive oil. When they are lightly browned, add 850 ml of stock.
- Cut the pointed peppers into slices, add them to the pot and cook. Also add the passata, 2 tablespoons of soy sauce, coconut milk, turmeric, lemon juice and thinly sliced chili. Cook it until the peppers are tender.
- In 150 ml of broth, thoroughly mix the wheat flour, add to the soup and until it boils. Cook for a few minutes (the whole thing should thicken a bit).
- Heat 1 tablespoon of olive oil and butter in a frying pan. Fry the prawns on both sides.
- Pour the stew into plates, decorate it with the prawns and chopped chives.
