Fillets of marinated mackerels

Prepare the marinade: Pour the vinegar into a saucepan, add the soy sauce, peel the ginger and grate it over, peel the garlic and cut into thin strips, add to the pan, and 2 slices of lemon, bring to a boil, then remove from heat and allow to cool.

Put the fillets in a large dish, pour over the marinade, turn over, cover the dish, chill and marinate for 2 hours.

Peel the onions, slice them, put them in a bowl with the vinegar and soy sauce, marinate for 1 hour, then drain.

Fillets having marinated 2 hours, remove from marinade, drain, cut into 2cm slices, lay them on plates, sprinkle slices of pickled onions and drain, pour over 1 drizzle of olive oil, pepper, herbs and tomatoes cut into wedges and serve.
