Prepare the apples, pour into a saucepan soya sauce, sugar, vanilla, and 2 tbsp lemon juice, bring to a boil and cook until it becomes a light caramel.
Remove from heat, allow to cool, add the butter and mix.
Meanwhile: turn the oven to 150 °C peel the apples, core, cut into slices 1/2 cm, spread each slice of butterscotch and then reconstitute each apple, slide a small wooden peak in each to hold well the slices and put them in an oven dish.
Coat the rest of caramel, cover the dish, slide in the oven and cook for 1 hour, then remove the lid and cook for 1 hour, basting occasionally with pan juices apples.
At the end of that time: Remove the dish from the oven, place each apple on a plate, top with caramel, decorate with a sprig of lemon balm or mint and taste hot or tepid, as such or together with cream or vanilla or caramel ice cream.
