Lunch dishes - fluffy omelette, Spicy meatballs with rice, beef bowl

A veggie-packed omelette to start your day, beef meatballs in a spicy sauce for a main course, and a bowl of meat and fresh veg with rice – three meals you can whip up in one go with minimal fuss.

Ingredients

Step 1

1 tbsp frying oil – 1  onion – 0.5  carrot – 0.5  red pepper – 0.25 tsp pepper – 1 tbsp Kikkoman Naturally Brewed Soy Sauce0.5 tbsp spring onion

Cut the carrot and red pepper into sticks and chop the onion and the spring onion. Fry the onion in oil until golden, then add the carrots and red peppers. Add the pepper and Kikkoman Soy Sauce. Finally, sprinkle with the spring onion and set aside.

Step 2

4  eggs – 1 tbsp Kikkoman Naturally Brewed Soy Sauce0.25 tsp pepper – 1 tbsp wheat flour

Separate the egg whites from the yolks. Pour the whites into a large bowl and beat until stiff. Add the egg yolks mixed with Kikkoman Soy Sauce and pepper. Whisk at a low mixer speed. Sift in the flour and mix gently.

Step 3

1 tbsp frying oil

Heat the oil in a frying pan and spread it thoroughly. Pour in half of the omelette mixture. Fry over a low heat for 1-2 minutes, then add half of the previously prepared vegetables on top. Cover with a lid and fry for about 4 minutes over a low heat. Remove the omelette from the pan. Repeat the process for the second omelette.

Step 4

Mayo-sriracha sauce from the "Bowl with beef and vegetables" recipe – 0.5 tbsp spring onion

Chop the spring onion. Fold the omelettes in half and place them in lunch boxes. Serve with the mayonnaise-sriracha sauce and spring onions.

Step 1

2 tbsp frying oil – 1  onion – 1  garlic clove – 0.5 tsp ground ginger – 200 g minced beef – 2 tbsp Kikkoman Naturally Brewed Soy Sauce50 ml sriracha

Chop the onion and garlic. Heat the oil in a frying pan and add the onion and garlic. Then add the ginger, mix, and add the minced beef. Fry the meat until brown.

Mix the Kikkoman Soy Sauce and sriracha together. Pour the mixture over the meat. Fry everything together for 1 minute. Transfer to a bowl.

Step 2

2 tbsp frying oil – 0.5  red pepper – 0.5  carrot – 2  eggs

Cut the carrot and red pepper into sticks. Add the oil to a pan and fry carrot and red pepper over a high heat for 2 minutes. Place the vegetables in a bowl next to the meat. Then fry the eggs until the whites are set and the yolks are still runny.

Step 3

100 g mayonnaise – 20 ml sriracha – 2 tbsp lemon juice – 1  garlic clove – 1 tbsp Kikkoman Naturally Brewed Soy Sauce200 g cooked rice – 0.5  green cucumber – 1 tbsp spring onion

Chop the spring onion and cucumber. Mix the mayonnaise with the sriracha, lemon juice, pressed garlic and Kikkoman Soy Sauce.

Place the cooked rice in two bowls. Add the chopped cucumber and place the fried eggs on top of the dishes. Sprinkle with the spring onions. Serve with half of the mayonnaise-sriracha sauce. Save the other half of the sauce for the next recipe – omelette with vegetables.

Tip:

Instead of beef, you can also use pork or duck.

Step 1

400 g minced beef – 1 tbsp frying oil – 1  carrot – 1  garlic clove – 1  onion

Place the meat in a bowl. Peel and grate the carrot, squeeze the garlic through a press and chop the onion into cubes.

Fry the onion, carrot and garlic in oil. Add the vegetables to the meat.

Step 2

1  egg – 40 g breadcrumbs – 2 tbsp Kikkoman Naturally Brewed Soy Sauce1 tsp pepper

Add the egg, breadcrumbs, Kikkoman Soy Sauce and pepper to the meat and vegetables. Mix well. Form walnut-sized balls, place them on a baking tray lined with greaseproof paper and bake for 20 minutes at 190 °C.

Step 3

100 ml sriracha – 3 tbsp Kikkoman Naturally Brewed Soy Sauce2 tbsp honey – 0.5 tsp ground ginger – 2  garlic cloves

Place the sriracha, Kikkoman Soy Sauce, honey, ground ginger and pressed garlic cloves in a saucepan and cook for about 15 minutes until the sauce thickens.

Add the baked meatballs to the pan with the sauce and mix thoroughly.

Step 4

300 g cooked rice – 1 tbsp spring onion – 1 tbsp sesame seeds

Chop the spring onion. Put the rice into the containers, arrange the meatballs and pour the remaining sauce over them. Garnish with the spring onions and sesame seeds.
