Ready for a snack that really hits the spot? Homemade soy fries, crispy and lightly salted, perfect for dipping in a delicious lemon mayo with a touch of soy. Easy to make, impossible to resist!

Ingredients

Fries:

1 kg
baking potatoes
100 ml
vinegar
Oil for frying

Lemon mayo with soy sauce:

2 
pasteurized egg yolks
Juice and zest from 1 organic lemon
300 ml
neutral-flavored oil
Salt

Preparation

Step 1

1 kg baking potatoes

Cut the potatoes into fries-sized pieces. Place them in a large bowl of cold water and let them soak to release the starch. Change the water about every minute for 5-6 minutes until the water runs clear.

Step 2

100 ml vinegar

Now, cook them in lightly salted water with 100 ml vinegar until they are tender. Remove them from the pot and let the excess water drain off.

Step 3

Oil for frying

Heat a pan or deep fryer with, for example, canola oil or corn oil, and fry the fries for 10 minutes.

Step 4

Salt

Remove them from the heat, let them cool, and then fry them again for a couple of minutes. Let them dry on a piece of parchment paper or paper towels, sprinkle with salt, and serve immediately.

Step 5

2  pasteurized egg yolks – 2 tbsp Kikkoman Naturally Brewed Soy Sauce – Juice and zest from 1 organic lemon – 300 ml neutral-flavored oil

Place the soy sauce, lemon juice and zest, and oil in a mixing bowl or food processor. Whisk on low speed while slowly adding the egg yolks. Continue whisking until you have a smooth mixture.
Adjust the flavor by adding more soy sauce to taste, depending on your preference.
