Preparation

Step 1

Wash and pat dry the apples, then halve them crossways. Using a melon baller, remove the cores and a little of the flesh. Combine the lemon juice and the KIKKOMAN soy sauce and brush the apple halves with the mixture.

Step 2

Combine the flour and the cacao powder. In a bowl over a waterbath, melt the chocolate and the butter. Take the bowl off the waterbath, briefly leave the chocolate and butter mixture to cool, then stir in and thoroughly combine the sugar and eggs, and the flour and cacao mixture.

Step 3

Fill the apples with the chocolate mixture, then cover with the chocolate drops and the pecans.

Step 4

Place the filled apple halves onto a grill tray and grill in the indirect heat area for about 20 minutes.
