You have to use special sushi rice – Japanese short-grain rice – to make sushi. Why short-grain rice? Because it’s starchy and the starch makes it sticky enough to hold all the sushi ingredients together. Always wash the sushi rice before you start. You can do this in a rice steamer or pan using equal quantities of water and rice. This causes the rice to swell and makes it perfect for sushi making.
