Kikkoman Vegetarian Nasi Goreng

Ingredients for 10 portions

Per portion: 2338 kJ / 558 kcal

  • 500 g carrots, thinly sliced
  • 500 g red bell pepper, roughly chopped
  • 500 g courgette, diced
  • 200 g leek, cut into fine rings
  • 100 g onions, cut into narrow wedges
  • 10 g garlic, chopped
  • 10 g ginger, chopped
  • 2 tbsp. sesame oil
  • 4 tbsp. vegetable oil
  • 500 g egg yolks and whites
  • Freshly ground pepper
  • Approx. 200-250 ml Kikkoman Naturally Brewed Soy Sauce
  • 1 kg whole grain rice, cooked
  • Cayenne pepper
  • Turmeric, ground
  • 100 g spring onions, cut into fine rings

Preparation

Preparation time: 25 mins

Heat up 2 tbsp. sesame seed oil and 2 tbsp. vegetable oil in a frying pan, then sauté the carrots, peppers, courgettes, leeks, onions, garlic and ginger for approx. 10 minutes. Whisk 3 tbsp. soy sauce and pepper in to the egg to season it, then scramble it in the remaining oil. Add the rice to the vegetables and continue cooking for a few minutes until hot. Season the nasi goreng with the remaining soy sauce, pepper, cayenne pepper and turmeric, arrange on plates, garnish with spring onion and scrambled egg and serve.
