Summer freshness salad

Ingredients for 4 portions

Per portion: 293 kJ / 70 kcal

For the vegetables: 

  • 2 small zucchinis
  • 10 pink radishes 
  • 2 green radishes 
  • 2 small carrots 
  • 3 tomatoes 
  • 4 small spring onions 
  • 1 small yellow beet 
  • 2 sucrine or 1 lettuce heart, 
  • 2 stalks of parsley or coriander

For the sauce in lemon-soy:


Preparation time: 15 mins

Wash salads, pick the leaves off them, and press them.

Wash and cut tomatoes in quarters, wash herbs and chisel them.

Peel carrots, beet, wash them and cross them on a mandolin with zucchinis and radishes. Put salad leaves in a salad bowl; add all the vegies and the herbs.

Prepare the sauce: grate the zest of the lemon over a bowl, add 1 tbsp. of lemon juice, oil, the Tarami soy sauce, the vinegar, pepper and whip a few seconds.

Just before serving, pour dressing and mix.
