Ratatouille

Ingredients for 4 portions

Per portion: 569 kJ / 136 kcal

  • 1 onion
  • 1 courgette
  • 1 aubergine
  • 2 large tomatoes
  • 1 garlic clove, crushed
  • 4 tbsp. olive oil
  • 6–7 tbsp. Kikkoman Stir-fry sauce
  • 200 ml tomato juice
  • salt
  • oregano
  • chili powder

Preparation

Preparation time: 25 mins

Cut the onion, courgette, aubergine and tomatoes into chunks. Sauté in hot olive oil with the garlic. Add the Stir-fry sauce and tomato juice and bring to the boil. Season with salt, oregano and chilli powder to taste. Serve with rice.
