Heat up 2 tbsp. sesame seed oil and 2 tbsp. vegetable oil in a frying pan, then sauté the carrots, peppers, courgettes, leeks, onions, garlic and ginger for approx. 10 minutes. Whisk 3 tbsp. soy sauce and pepper in to the egg to season it, then scramble it in the remaining oil. Add the rice to the vegetables and continue cooking for a few minutes until hot. Season the nasi goreng with the remaining soy sauce, pepper, cayenne pepper and turmeric, arrange on plates, garnish with spring onion and scrambled egg and serve.
