Fried asparagus with ginger and sesame seed oil
Peel the asparagus and cut diagonally into 4mm long pieces. Peel the carrot, halve it lengthways and cut diagonally into pieces.
Heat the sesame seed oil in a frying pan, add the asparagus and season with the soy sauce and a generous pinch of sugar. Add the carrot pieces and ginger and fry everything at a high heat, stirring continuously, for around 3 minutes. Then reduce the heat and sprinkle on fresh coriander and black sesame seeds. You can serve this dish with rice if you like.
Outside the classic asparagus season, you can also use green asparagus, which has a slightly more intense taste, for this dish.

- > 1 kg white asparagus
- > 1 carrot
- > 1–2 tbsp. sesame oil
- > 5-6 tbsp. Kikkoman soy sauce
- > a pinch of sugar
- > 50 g fresh ginger root, chopped finely
