Asparagus and tofu salad

Peel the bottom third of the asparagus and cut diagonally into 5 cm long pieces. Bring the water to the boil with 1 tbsp soy sauce and cook the asparagus in it for 5 minutes (only cook the tips for 3 minutes). Combine the ingredients for the dressing.

Prepare the tofu according to the packet instructions and combine with the asparagus and dressing. Wash the spring onions and chop into small pieces. Wash the sorrel, dab dry, cut into strips and stir in. Peel the ginger, grate finely and add it to the salad.

Ingredients for 4 portions:

    • > 250 g tofu
    • > 2 spring onions
    • > 30 g sorrel (or cress)
    • > 1 piece of fresh root ginger
    • > 400 g green asparagus
    • > 1 tbsp. Kikkoman soy sauce

    For the dressing

    • > 4 tbsp. Kikkoman soy sauce
    • > 4 tbsp. lemon juice
    • > 3 tsp. sugar
    • > Grated rind of ½ lemon
    • > 5 tbsp. sesame oil
