Teriyaki Stir-Fry Beef with Leek and Cashew Nuts

Cook the basmati rice in boiling salted water. Wash the leeks, deseed the peppers and cut both into fine rings. Dry roast the cashew nuts in a wok or frying pan and place aside. Heat the oil in the wok and brown the meat. Add the leek and peppers, cook for approx. 10 minutes and season with Teriyaki marinade. Stir in the cashew nuts. Serve the meat on a bed of rice and sprinkle with the chopped chives.

Ingredients for 4 portions:

  • > 200 g Basmati rice
  • > salt
  • > 3 leeks
  • > 1-2 red jalapeno chillies
  • > 50 g cashew nuts
  • > 2 tbsp. olive oil
  • > 600 g lean beef
  • > 4 tbsp. Kikkoman Teriyaki marinade
  • > 2 tbsp. chopped chives

This recipe goes also well with Kikkoman Sukiyaki stir-fry sauce.
