You can tell the difference between naturally brewed soy sauce such as Kikkoman and chemically produced soy sauces by their appearance, smell, feel and taste.

See the difference

Do you see how the colours of the sauces in each bowl differ? Kikkoman naturally brewed soy sauce is reddish-brown and slightly transparent. The non-brewed soy sauce is dark, cloudy and looks like syrup.

Smell the difference

This is how the professionals do it: stir the soy sauce briefly with a chopstick, then hold the chopstick under your nostrils and breathe in deeply. You can really smell the difference! Kikkoman naturally brewed soy sauce has a slightly sweet, spicy and appetising aroma. The other bowl containing non-brewed soy sauce has a pungent and synthetic aroma.

Feel the difference

Do the chopstick test! Chemical soy sauce clings to the end of the chopstick as a thick, dark-coloured droplet. Naturally brewed Kikkoman soy sauce immediately runs off the chopstick in small droplets.

Taste the difference

One small drop on the tongue is sufficient to discern the unique flavour of Kikkoman naturally brewed soy sauce. Spicy, aromatic and exquisite with a special sweetness. A versatile flavour that is full-bodied yet not overpowering. The other bowl on the left side, which contains non-brewed soy sauce, tastes salty, overpowering and artificial.
