Empire State Herb Chicken served with a Mixed Leaf Salad

Finely chop the jalapeno chillies and mix well with the other marinade ingredients. Marinate the chicken breast fillets for 30 minutes. Grill the fillets for 5-10 minutes on each side (or until cooked through), baste with the remaining marinade and season with salt. Arrange on a bed of mixed leaves and serve.

  • > assortment of mixed leaves

For the marinade:

  • > 2 deseeded jalapeno chillies
  • > 4 tbsp. olive oil
  • > juice of 1 lime
  • > 1 tbsp. brown sugar
  • 2 tbsp. Kikkoman soy sauce
  • > 115 g chopped rosemary
  • > 115 g chopped parsley
  • > salt
