Coconut cake with apricots

To make the cake put all the ingredients in the blender. Spread the mixture onto a baking tray lined with baking paper and bake in the oven at 180°C for approx. 40 minutes. Halve the apricots, core them and cut into thick slices. Put the sugar, cinnamon stick and vanilla pod into 125 ml of water and bring to the boil, add the apricots, cook until soft, leave to cool and place them on top of the cake. Remove the cinnamon stick and reduce the liquid for approx. 10 minutes. Leave the syrup to cool slightly, then pour over the apricot slices on the cake.

Without doubt an unconventional cake that will taste even more delicious if the apricots are fresh and perfectly ripe!

    To make the cake:

    • > 120 g melted butter
    • > 120 g luke warm water
    • > 100 g grated coconut
    • > 100 g grated hazelnuts
    • > 100 g plain flour
    • 3 tbsp. Kikkkoman sweet soy sauce
    • > 20 g cocoa powder
    • > 1 pack of vanilla sugar
    • > 4 eggs

    To make the apricots:

    • > 1 kg apricots
    • > 300 g sugar
    • > 1 cinnamon stick
    • > 1/2 vanilla pod
