Braised Carp in Garlic Soy Sauce

Bring a pan of water to the boil and blanch the carp. Keep the cooking water. Fry the spinach in oil briefly.

Put the oil and garlic in a pan and heat it up until the garlic turns light brown. Then remove the garlic from the pan. Slice the spring onion and sauté it in the pan.

Put the sugar in the pan and melt it. Then mix together the sake, naturally brewed soy sauce and vinegar. Put the blanched carp pieces into the pan and bring to the boil, then reduce until the sauce thickens.

Arrange the spinach on a plate. Then put the carp pieces on top and pour over the sauce. Garnish with finely chopped chives.
